Minted Pea Soup
As the chilly weather sets in, try your hand at this satisfying winter warmer... it's easy peasy!
Serves 4-6
Ingredients
15 mls butter
1 bunch spring onions
500 gram(s) fresh or frozen petits pois
15 mls finely chopped mint
1 liter water
5 mls salt
5 mls sugar
30 mls crème fraîche
Method
This is a fresh-tasting and satisfying soup made without stock. Melt the butter in a large pan and add the spring onions, finely chopped. Cook gently for 5 minutes without allowing them to colour, then add the petits pois, mint, water and salt and sugar. Bring to the boil, reduce the heat and simmer until the onions and peas are tender - about 10 minutes. Purée and stir in the crème fraîche. Adjust the seasoning and reheat without boiling.
